Peel potatoes

Peel the potatoes, approximately 2 (or 1 very large) per serving

Cut potatoes into chunks and place in water

Cut the potatoes into roughly-equal-sized chunks, maximum of an inch on any side, to promote even cooking without having them absorb too much water. Place the chunks into water to be rinsed and not oxidize.

Add potatoes to pot and cover with water

Put the chunks of potato into a large pot, then put in enough water to cover them and just a bit extra.

Gently boil potatoes until tender

At a mid-high heat, bring the water to a gentle (not rocking) boil until a butter knife can slide in and out easily, without the potato gripping and before they fall apart. This should be approximately 15 minutes after the potatoes reach a boil.

Drain potatoes

Using a strainer, drain the potatoes either into another vessel (great for making bread!) or down the drain if you don't want to keep it. Return the potatoes to the pot.

Add milk and butter to potatoes and mash

Cut the butter into the potatoes, and mash along with the milk until the desired consistency is reached. Add milk one dollop and butter one small slice at a time if the potatoes are too thick.

Add salt and pepper to taste

Sprinkle the salt and pepper into the mashed potatoes, mixing them in thoroughly. Taste throughout the process and adjust as necessary.
