Steps

Prepare yeast

In a large bowl, mix 2 cups of lukewarm water, 2 tablespoons of sugar, and 1 tablespoon of yeast. Gently stir.

Let yeast sit for 10 minutes

Let the yeast mixture sit somewhere warm for 10+ minutes

Add salt, oil, and molasses

The yeast mixture should show obvious signs of growth and puffiness in the yeast. Stir in 2 teaspoons of salt, 2 dollops (dollops are just very quick pours) of olive oil, and 1 teaspoon of molasses

Add flour until combined

Gradually mix in 5 cups (625 grams) of All-Purpose flour until fully combined.

Prepare dough for first rise

Use olive oil to coat your hands and the dough - top and bottom - which helps protect it from drying while rising but also not stick to the bowl. Cover the bowl with a clean towel, then place somewhere warm.

Let dough rise for 3+ hours

Let the covered bowl of dough rise somewhere warm for 3+ hours, until the dough has at least doubled in size.

Knead and split dough

Once the dough has risen, punch it down and knead gently a few times - 4 to 6 turns will do - before splitting the dough in halves.

Prepare pans and dough for second rise

Prepare the pans by coating them with olive oil. Sprinkle a pinch of kosher salt and a few heavy dashes of oregano evenly over the oil on the pans, then place each half of dough onto a pan. Loosely work them out to spread into the shape of the pan, but don't try too hard.

Let dough rise on pans for 1-2 hours

Let the pans sit somewhere warm for another 1 to 2 hours as the dough on each rises.

Flip dough

After the rise on the pans is complete, flip each dough on its pan and make sure the bottoms of the pans have enough oil and oregano still. Work the dough into the shape of the pan, leaving a little extra puffiness where the crust will be.

Preheat oven to 415°F

With two racks evenly spaced in the oven, preheat to 415°F

Mix sauce in bowl

Make the sauce in a medium bowl by mixing one 6 ounce can of tomato paste, 6 ounces of water (I just use the tomato paste can and fill it to measure), a dollop of olive oil, a healthy amount of oregano (1 and 1/2 tablespoons or more is what I use), kosher salt, black pepper, onion powder, garlic powder, thyme, crushed rosemary, and a pinch of sugar. Don't be afraid to taste and add/adapt the sauce as you see fit as you go!

Spread sauce over dough

Once it is in a good place, use a large spoon to spread the sauce evenly over the dough.

Grate mozzerella cheese and put on pizza

Grate the mozzarella cheese, and spread evenly over the sauce.

Cook for 20 minutes

Put the pizzas in the oven, cooking for 20 minutes. For a more even cook, you can optionally swap the pans between racks at the 10 minute mark.

Remove to racks to cool

Once the pizzas are cooked (lift up the bottoms with a spatula to check), remove them from the oven and slide them off their pans onto wire racks to cool.
